With the addition of the <br />following, the plans are approved: <br />I. All food service equipment must be listed by the National Sanitation Foundation <br />(NSF) for its intended use. <br />2. Food preparation tables must be NSF listed stainless steel tables. <br />3. Three corril.-�rtment sinks must be NSF listed for warewashing, freestanding with <br />integral drainboards at both ends. The food preparation sink shall have at least one <br />integral drainboard. <br />4. Plumbing must meet state and local codes. An indirect waste is required for the <br />food preparation sink, mechanical dishwasher, ice machine, running water dipper <br />well. and equipment in which food is placed. <br />5. A reduced pressure backflow prevention device is required between the copper <br />water pipe and the carbonation device. <br />6. The floor must be surfaced with a durable, nonabsorbent, easily cleanable <br />material. <br />7. The ceiling above the food preparation areas must be nonabsorbent, smooth, and <br />easily cleanable. <br />8. Extra wall protection is required on walls behind sinks and food preparation tables. <br />A 16 inch high backsplash of plastic laminate, fiberglass reinforce plastic or equal <br />is acceptable.
