Evergreen Way Dairy Queen, City of Everett <br />LSA No. 3146 <br />GREASE INTERCEPTOR SIZING <br />Using the method from Appendix H of the 1991 Unifarm Plumbing Code: <br />Notes: <br />1. Toilets, urinals and other similar fixtures shall not waste <br />through the interceptor <br />2. Interceptors shall have a minimum of two compartments <br />3. One manhole shall be �rovided for every 10 feet of <br />interceptor lerigth. Manhole covers shall be gas-tight in <br />construction and have a minimum opening of 20 inches. Manhole covers <br />shall �e designed for H-20 loading if located intraffic areas. <br />4. Each chamber of the qrease interceptor shall be vented to the outside. <br />Venting shall be at least 2-inch cast iron at a 2%-min slope up from <br />the tank. Vent openings in the tanks could be located anywhere above <br />the standpipe overflow elevation or in the manhole riser. <br />Size on the basis of: <br />number of ineals waste f).ow retention storage interceptor <br />per peak hour x rate x time x factor = size <br />Peak meals. The store will have a design peak capacity of one customer <br />per minute. Of these, h0 percent buy Dairy Queen products only which ar.e <br />assumed to not generate grease, the remainder will buy meals. Assume that <br />each "meal" customer buys two meals: <br />60 x.6 x 2 = 72 <br />Waste flow rate. <br />for single service kitchen = 2 gallon flow <br />Retention time. <br />for single service kitch = 1.5 hours <br />Storage factor. <br />for single service kitch = 1.5 <br />Total liquid capacity = 72 x 2 x 1.5 x1.5 = 324 gallons <br />Use nominal 600 gallon tank--L�tility Vault Co.
