Evergreen Way Dairy Queen, City of Everett <br />LSA No. 3146 <br />GREASE INTERCEPTOR SIZING <br />Using <br />the method from Appendix H of the 1�91 Uniferm Plumbing Code: • <br />Notes: <br />1. Toilets, urinals and other similar fixtures shal.l not waste <br />through the interceptor <br />2. Ir.terc:eptors shall have a minimum of iwo compartments <br />3. Gne manhole shall be provided for ever.y 10 feet of <br />interceptor lengtn. Manhole covers shall be gas-tight in <br />construction and have a minimum opening of 20 inches. Manhole covers <br />shall be designed for H-20 loading if lccated intrafEic areas. <br />4. Each chamber of th� grease interc:eptor shall be vented to the outside. <br />Venting shall be at least 2-inch cast iron at a 2o-min slope up from <br />the tank. Vent openings in the t.anks could be located anywhere ailove <br />the standpipe overflow elevatiori or in the manhole riser. <br />Size on the basis of: <br />number of ineal� ':aste flow r�atention storage interceptor <br />per peak houz x rate x time x factor = size <br />Peak meals. The store will have a design peak cspacity of one customer <br />per minute. of these, 40 percent bay Dairy Queen products only which are <br />assumed to not generate grease, ihe remainder will buy meals. Assume that <br />each "meal" customer buys two meals: <br />60 x.6 x 2 = 72 <br />Wasts flow rate. <br />for singlF service kitchen = 2 gallon flow <br />Retention time. <br />for single service kitch = 1.5 hours <br />Storage factor. <br />for single service kitch = 1.5 <br />Total liquid cap�ci::y = 72 x 2 x 1.5 x1.5 = gallons <br />Use nominal 600 gallon tank--Utility Vault Co.
