Concrete blocks used for <br />interior wa11s in these locations shall be covered. <br />(3) Floors of all food preparation, food storage, toilet <br />rooms and vestibules shall be constructed of smooth, <br />durable grades of linoleum or plastic and shall b� <br />maintained in good repair. <br />(4) Permanently fixed artificial light sources, witr <br />shielding to protect against broken glass falli+ig onto <br />food, shall be installed to provide at least 20 foot <br />candles of light on all food preparation surfaces <br />and at equipment or utensi_i washing worlc levels. <br />(5) Hot and cold water tempere3 by means of a mi.xi.�g <br />valve or combination faucet must be made available <br />at the hando�ash stations in the preparation area <br />and restrooms along with the three comp�rtment utensil <br />sink, <br />(6) The three compartment sinlc must be NSI' approved caith <br />t:ao drainboards and connected inCirectly to the sewage <br />system. <br />(7) A mopsinlc plumbed with hot/cold water must be install.ea <br />and used for the cleaning of mops or similar o�et <br />floor cleaning tools and for the disposal of mopwater <br />or similar liquid wasCes. <br />
