You have proposed changing the 2-door reach in refrigerator with a larger <br /> 3-door model. As proposed, the refrigeration capacity of the restaurant will consist of the 3-door <br /> refrigerator, 48" sandwich cooler, and a 2-door freezer. <br /> It is my decision that the refrigeration capacity is not adequate. As a minimum, an additional 2-door <br /> reach in refrigerator will be required. Even then, because this faciliry has a limited amount of <br /> refrigeration equipment, no advanced preparation of foods that require cooling will be allowed unless a <br /> walk-in refrigerator is installed or other Health District pre-approved cooling method is in place. This <br /> means cooling of par-cooked chicken will not be allowed. If chicken is to be par-cooked and held prior <br /> to fuli cooking, it must be hot held on the range or a hot holding unit at a minimum of 140°F prior to full <br /> cooking. <br /> As I stated in my le[ter of DecemUer 22, 2006, all food service equipment, both new and used, must be <br /> listed by the Natinnal Sanitntion Fowidarion (NSF) or equivalent for its intended use. Used and new <br /> refrigeration must be capable of holding potentially liazardous food at 41°F or below. <br /> Please contact me if you l�ave any questions.
