10. Extra wall protection is required on walls behind sinks and food preparation tables. A 16-inch high <br />backsplash of plastic laminate, fiberglass -reinforced plastic or equal is acceptable. Floor to ceiling <br />protection is required on wall behind dishwashers. \Vall protection behind mop sinks must cncer the <br />entire splash zone. Plastic coated hardboard is not acceptable. <br />11. The floor must be surfaced with a durable, nonabsorbent, easily cleanable material. <br />12. The ceiling above the food preparation areas must be nonabsorbent, smooth, and easily cleanable. <br />13. All light fixtures in fou. 1 reparation and storage areas must be provided with covers or shatterproof <br />bulbs. <br />14. Plumbing must meet state and local codes. <br />15. The ventilation system shall be installed and operated to meet applicable building, mechanical, and <br />fire codes. <br />16. The letter you sent dated March 15, 2003 and received on April 2, 2003, indicates you intend to add <br />meat, fish and vegetable sales in the future. This will be considered a remodel and or menu <br />expansion. Because of this, you will need to add equipment sinks and work areas. The type and <br />amount of equipment, sinks and work areas needed will be determined by the type of food <br />processing you are proposing. If you intend to cut and or package meat and fish and or vegetables <br />additional sinks, equipment, worktables and preparation areas will be required. Prior to approval to <br />sell these products you will need to complete another plan review and permit process. A pre- <br />operational inspection will also be required <br />A pre -operational inspection is required prior to opening for business. At the time of inspection the <br />construction of the food service establishment must be complete and all equipment must be in place. <br />Incomplete construction may result in a $140.00 reinspection fee.
