The Health District operating permit applicatior. process must be completed prior to opening for <br />business. <br />2. An indirect H�aste is required for the food preparation sinks, [hree-compartmen[ sink, pop dispenser, <br />steam table, walk-in refrigeration, and any equipment in which food is placed. <br />3. A reduced pressure backflow prevention device is required at the end of the copper water pipe <br />serving the pop dispensing system prior to the carbonation device. No copper pipe or u[her <br />potentially corrosive material is allowed after the reduced pressure backflow prevention device. <br />4. Water heaters must be of sufficient size to provide hot water to dishwasher and/or scullery sinks and <br />at the same time provide hot water to all handwash sinks. <br />5. Hot water must be available to all handwash sinks within 15 seconds. <br />6. AI! food service equipment must be listed by the National Sanitation Foundation (NSF) for its <br />intended use. <br />7. Approp�iate sneeze protection is required at the front counter area. <br />8. Extra wall protection is required on walls behind sinks and food prepazaG�n tables. A 16-inch high <br />backsplash of plastic laminate, fiberglass-reinforced plastic or equal is acceptable. Wall protection <br />behind mop sinks must cover the entire splash zone. Plastic coated hardboard is not acceptable. <br />9. The floor must be sttrfaced with a durable, nonabsorbent, easily cleanable material. <br />10. The ceiling above the food preparation areas must be non-absorbent, non-perPorated, smooth, and <br />easily cleanaUle. <br />11. All light 6xtures in food preparation and storage areas must be provided with covers or shatterproof <br />bulbs. <br />12. Plumbing mus[ mee[ state and local codes. <br />13. The ventilation system shall be installed and operated to mee[ applicable building, mechanical, and <br />fire codes. <br />
