All new food -service equipment must meet <br />National Sanitation Foundation standards or <br />its equivalent. <br />b. All existing equipment must be in good repair; <br />and meet N.S.F. standards (sandwich table, <br />griddle, fryer, reach -in refrigerator, ice <br />machine, and glasswasher). <br />2) All food -service equipment must be served by <br />indirect drains (exanple: floor sinks and funnel <br />rains except refrigeration equipment with built-in <br />evaporators, handwash and mop sinks. <br />3) <br />a. If food is prepared on the premises (example: <br />rinsing lettuce, tomatoes, etc.) then a one <br />or more compartment sink is required. The <br />food prep sink must have at least one drainboard. <br />Also, the drainboard must be an integral part <br />of the sink assembly. <br />14) <br />b. The two compartment scullery sink (equipment <br />item 12) cannot be used for food prep work. <br />c. The food prep sink must meet N.S.F. standards <br />as mentioned in item 1 of this report. <br />a, The type of dishwashing machine (equipment item <br />13) is not indicated on your layout plan except <br />f <br />7 <br />
