Proposed Glacier Lane Restaurant and Cocktail Lounge <br />April 18, 1983 <br />Page Three <br />10) Should there be any open display of food in the service <br />area, a counter guard will be required. <br />11) Should frozen desserts be dispensed, a cold running water <br />dipper well, wash kit, etc. will be required. This will <br />require additional plumbing. <br />12) A commercial hood canopy, make-up air, and duct systems <br />are required when cooking, frying, h-ating, broiling, <br />and baking. If the existing hood canopy, make-up air <br />and duct system is used, it must meet item 1-b of this <br />report. <br />13) <br />a. There is no storage space for foods, single -service <br />articles, etc. There must be adequate storage for <br />supplies. <br />b. All food storage shelves must be at least six (6) <br />inches above floor level. All shelves must be <br />smooth and easily cleanable. <br />14) The existing mop sink is part of the building facilities. <br />A mop sink should be located near the food -service <br />establishment. <br />15) <br />a. The lighting schedule was not presented with your <br />layout plan. At least 20 foot-candles of light is <br />required on all working surfaces in the kitchen. <br />b. A small light fixture (preferably with a fluorescent <br />bulb and switch) must be installed under the bar top <br />in order to illuminate the glasswashing operations. <br />c. All kitchen and cocktail bar light fixtures must have <br />shields or protective guards. <br />16) The back section of the cocktail bar must be an enclosed <br />structure so there is no exposed 2"x2" or 2"x4" supports <br />(sanitary design). <br />17) Adequate facilities must be provided for the orderly <br />storage of employee's clothing and personal belongings. <br />18) Finish schedules were not presented with your layout <br />plan. Walls, floors, and ceilings in the kitchen and <br />the cocktail bar must be smooth, nonabsorbent, and <br />easily cleanable. Also, oors must have coved base <br />_S <br />
