All food -service equipment must meet the National Sanitation <br />Foundation standards or its equivalent. <br />2. All food -service equipment must be plumed to indirect drains <br />(floor sinks or funnel drains) except hand -washing sinks, disposers, <br />scullery sinks, mop sinks, and refrigeration equipment with built-in <br />vaporators. <br />3, a. A small hand -washing sink is required in the food preparation <br />area. The sink must have hot and cold running water. <br />b. Soap and towel dispensers are required for the hand -washing <br />sink. <br />4. A mop sink is re.-ired on the premises. <br />5. a. The three -compartment scullery sink must have .wo (2) drain - <br />boards, one for soiled utensils and one,. for clean utensils <br />to drain and air-dry. <br />b. If this sink is used for both scullery and food preparation, then <br />it must be plumbed to a indirect drain (floor sink). <br />6. Employee restroom is required. The restroom must have hot and cold <br />running water, soap and towel dispensers, water closet, vented to <br />the outside air, smooth and nonabsorbent walls, floor, and ceiling, <br />self -closing door, etc. <br />7. There must be at least 20 foot-candles of light on all working <br />surfaces. <br />
