The Cookie Jar, The Everett Mall
July 8, 1980
Page 2
8, a. "'ookies contain shortening, therefore a vapor type hood may not mee-k
the building and fire ccAes. You should discuss this with the City
of Everett Building Department.
b. The Snohomish Health District has been asking that all hoods have
f 'ters to help prevent lint and dirt build-up in the duct system.
9. Ad. ..;.•.e facilities must be provided for the orderly storage of employee's
cic nirg and personal belongings.
10. The brick wall behind the two convections is not a smooth or easily cleanable
surface. All wall surfaces in the food -reparation, storage, and restroocr
areas must be smooth, nonabsorbent, and easily cleanable.
11. The vinyl tile floor must have a coved base.
12. From your layout plans and specifications, the menu appears to be cookies
plus miscellaneous beverages. Iiowever, should you decide to dispense hard
ice cream, a cold running water dipwell plumbed to a indirect drain would
be required. Dispensing freezers would require wash kits (hot and cold
water) on or adjacent to the machines.
13. Tloe plan review was made from information you presented to our office.
_'herefore, sh,)uld there be any major changes and/or additicns to your
layout plans and equipment specifications, you must notify the Snohomish
Health District of the changes.
14. It should be pointed out that the health department approval of the finished
installation (equipment and facilities) is subject to the final field
inspection. You should call, when ready, for the final field inspection.
The health department will make field checks of the construction.
15. In 1980, the Snohomish Health District's Board of Health established a
plan review charge for review of plans an specifications. The fee schedule
is $25.00 per hour. Your total review tame is four (4) hours or $100.00.
The fee must be paid before the food -service establishment permit is issued.
The Snohomish Health District would suggest that an office appointment be made
with you and/or your designer so we could discuss your plans and the above
mentioned items.
Very truly yours,
John W. Lorenz, R. S.
Environmental health Specialist III
JWL: dmb
Y/cc: Mr. Kenneth Callahan, City of Everett Building Department.
Mr. Mel Watson, Bargreen Restaurant Company
