The plar.s are anproved <br />pruvided the folluwin� items are included in the <br />completed facility: <br />1) The three compartment scullery sink is shown <br />with only one integral drainboard. This is only <br />acceptable provided: a) complete separation of <br />soiled and clean dishes is maintained; b) dishes <br />are n�t stored on preparation work tables; and <br />3) proper dishwashing technique is followed. <br />2) A.L1 fuod service equipment must be served by <br />i�direct drains except re°rige�ation equipment <br />with built-in evan�rators, handsinks and mopsinks. <br />Your dipperwell, ice t.iachine, vegetable sink, <br />disho•ashing sinks, etc, must meet this re�uirement. <br />3) :1 mopsi-nk is needed for the dra�oing and disposal <br />of n,op coater.
