The Building Code does not differentiale tlie Cypes of commercial <br />dishwashers other than the exception for undercounter units. There is no doubt that using <br />a Type II hood over a high temperature machine or conveyor s[yle machine is important <br />in reducing the amount of water vapor in a food preparation area. Hot water sanitizing <br />machines require water temperatures of I65 degrees F(minimum) and create a great deal <br />of water vapor when operated. <br />It is important to note that The Building Code excepdon for che undercounter machine <br />states "The second exception exempts under-counter dishwashing machines becausa of <br />the minimal water vapor they produce." 7he consavction of our Model U34 under- <br />counter machine is identical to our Models A4 and AS except it is only 34" tall and has a <br />single door. The amount of water used per cycle, the �vater temperature (120° F <br />minimum), the wash cycle time (90 second.;) and the wash pump and motor are all <br />identical, only the cabinet is different. Also, as a reference, three compartment sinks <br />utilize the same water temperature with the major difference being we use far ]ess wa[er <br />and employ rinse additives which allow [he ware to exit the machine tvith very litt[e <br />water left on the surface. Maay inspectors around the countiy have reviewed this <br />information and agree Uiat a vent hood is not required over an Auto Chlor lo�v energy <br />dishmachine.
