The existing hood canopy wi11 be used, however a <br />new duct system with make-up air and fan will be <br />inst211ed. If the existing hood filters are in <br />good repair they may be used. <br />7. <br />0 <br />When dispensing hard ice cream, a cold running water <br />dipwell is required. <br />All iood-service counters must be designed and con- <br />structed so there are no exposed 2"x2" or Z"x4" <br />members.
