A11 new and existing refrigeration equipment must be able to <br />maiatain safe food temperatures (45oF. or below). <br />11. A11 walls, floors, and ceilings in the food preparation, dish- <br />washing, scullery, storage and employee restroom areas must <br />h2ve smootfi, non-absorbent and eesily cleanable surfaces. <br />Floors must be coved at aZl wall junctures. <br />13. At least 20 foot-candles of light is required on a11 working <br />surfaces. <br />14. Employee's restroom must be vented to the outside air. <br />15. The new two compartment sink with drainboards must be commer- <br />cial construction. <br />16. Adequate storage shelves are required (storeroom). Shelves <br />must not be at floor level. <br />17. Facilities must be provided for the orderly storage of employee's <br />clothing and persunal belongings. A locker covld be used. <br />18. Your customers (56 seats) will share with the other business'es <br />the existing mall's restroom facilities. you should contact <br />the Everett Building Department regarding this matter. <br />I�� 19.
