The plumbing schedule submitted indicates that the food preparation sink and the dishwashing sink <br />will have direct drains. The food preparation sink and the dishwashing sink are required to have <br />indirect drains (an air gap). This change must be noted on a revised plumbir.g schedule. <br />8. All food service equipment must be listed by the National Sanitation Foundation (NSF) or equivalent <br />for its intended use. The Adcraft prep refrigerator, Item #5, Model #RF-20, was not found in the <br />current NSF or equivalent listings. This equipment must be replaced with NSF or equivalent listed <br />equipment or documentation must be submitted which demonstrates NSF equivalency. <br />Manufacturer names and model numbers for replacement equipment or equipment documentation <br />must be submitted. Originally submitted manufacturer names and model numbers should be <br />rechecked to assure the information submitted is accurate. Pleas� note that subsidiary <br />manufacturers are often not found in the NSF and equivalent listings. The manufacturer name <br />should be verified and submit the parent company name if one is found. <br />9. No hood ventilation system was indicated on lhe floor plan for the cook line. A hood ventilation <br />system is required for the cook line and must be shown on the floor plan. The manufacturer name <br />and model number for this equipment must be submitted. <br />10. No manufacturer name and model number was submitted for the cooler, Item #3, and the roast pig <br />oven, Item #9. The manufacturer names and model numbers for this equipment must be submitted. <br />11. No counter top food service equipment was included on the floor plan. A complete list of all counter <br />top equipment'(rice cookers, soup warmers, steam tables, mixers, blenders and the like) must be <br />submitted. The list must include the manufacturer names and model numbers for all the equipment. <br />12. The equipment list indicates a proposed future ice machine and steam table. Due to the limited size <br />of this proposed establishment the anticipated location of the future ice machine and steam table <br />must be shown on the floor plan. <br />13. This (acility has a limited amount of reach-in refrigeration equipment. No advanced preparation of <br />foods that require cooling and no cooling of leftover foods will be allowed unless a walk-in <br />refrigeralor or blast chiller (repid temperature pull down refrigerator) is installed or other Health <br />District approved cooling method is in place. All proposed cooling methods must be approved prior <br />to final ptan approval. A revised HACCP is required for any proposed cooling method. <br />14. Your proposed establishment has only one 1-door upright refrigerator (23 cubic feet) and one <br />refrigerator unknown capacity refrigerator, item #3, indicated on the floor plan. A minimum of 144 <br />cubic feet of refrigerated food storage space is required for refrigerated food storage. Food <br />preparations refrigerators are required but are for immediate use food storage and do not take the <br />place of the required minimum arnount of food storage refrigeration.
