The amount of food storage refrigeration for your proposed food <br />establishment is less than the minimum requirement of 144 cubic feet of food storage refrigeration. <br />A minimum of an additional 121 cubic feet of food storage refrigeration is required. This may <br />change depending upon the proposed use and cubic feet capacity of the refrigerator, Item #i3. The <br />location of this equipment must be shown on the floor plan. The manufacturer name and model <br />number for this equipment must submitted. Consideration of the installation of refrigeration of a <br />tesser amount requires written justification to be submitted for review. This written justification <br />must include the projected volume of food to be stored, the number of deliveries for each food item <br />per day/week, and the number of ineals served each day. The justification must also include the <br />reasons why you believe a variance to the minimum refrigeration requirement should be granted <br />Please note the submittal of the documentation is not a guarantee of approval to reduce the <br />minimum amount of refrigeration <br />15. The floor plan submitted is of an unknown scale. Submit a revised floor plan, drawn to scale, <br />showing focation of all equipment, plumbing fixtures and the like that inciudes the required <br />additional sinks and information. 7he scale of the drawing must be no smaller than'/< inch equals 1 <br />foot. Please note that plans may be submitted in an unsecured PDF format.
