Your layout plans must show the type of wall, floor, and ceiling <br />finishea in the food preparation, disheasii±ng�,scullery, storage, <br />the area behind the cocktail bar, and the reatrooms. These areas <br />must have smooth� nonabsorbent� and easily cleanable su:faces. <br />Also� all floors must have coved bases at the wall junctures. <br />2, The hood canopy, duct, and make-up systems are not shown. Also� <br />a ceiling ventilator is reco�nended over the Jackson dishwashing <br />machine in order to reduce condensation in the kitchen. <br />3. a. If you construct your own walk-in cooler, the inside liner <br />muat be smooth, nonabsorbent.. and easily cleanable. Also� the <br />inside liner joints and seams must be kept to a minimum. Corrosion <br />resistant metals� plaetic laminates� and smooth exterior plywood <br />panels may t� used as inside linera. However, the latter must be <br />aealed with two to three coats of paint that is especially designed <br />for cold storage rooms. The low temperature paint is mold or <br />mildew resistant, non-toxic, white, smooth, and washable. <br />b, If floor drains are used� they must be plumbed to indirect <br />draina. <br />c. Walk-in cooler lighl• fixtures must have guarda or shields. <br />4, a. At least 20 foot-cendlee of light ia required on all wocl�ing <br />surfaces in the kitchen as well as the cocktail bar. <br />b, A light fixture (preferably fluorescent) muet be installec' <br />under [he cocktail bar top to properly illmninate the glasswashing <br />and aorking areas. The lighting achedule is not ahown in your <br />layout plane. <br />S. The back assembly of the cocktail bar muat be emoo:h and free of <br />openinge and/or cracks. <br />6. All restroom doors must be self-closing (employees and public). <br />7.
