All food-service equipment must meet the National Sanitation <br />Foundation Standards or its equivalent. <br />2. a. All food-service equipm�.nt must be plumbed to indirect draina <br />except diaposers, hand-washing, mop, and scullery sinks. However, <br />if your pot and pan sink (:scullery) is used for food preparation, <br />then it muet also be plumbed to a floor sink. <br />b. The dishwashing machine must be served by a floor sink (not <br />shown on your layout plan). The three compartment sink could <br />be served by the same floor sink. <br />3. a. The type of dishwashing machine was not i�dicated on your <br />equipment specificationa (low or high Gemperature machine), You <br />indicated the machine would be a low temperuture chemical <br />machine. The diahwashing machine specifications are required <br />by the health department as part of your plan review. <br />b. Soiled and clean dishtable construction is not well detailed <br />(elevatione), The diehtables or drainboarda must meet N.S.F, <br />atandarde or its equivalent. Also, this appliee to ecullery <br />eink and drainboards. <br />4• a• The multi-use of the walk-in cooler is not approved for both <br />food and keg and case beer stc-age.
