It <br /> nppears Che hood will need to be extended over the <br /> "Stove Pot Burner". Hood should extend a foot or more <br /> beyond the cooking surfaces; The hood and fire extinguishing <br /> eyatem shall meet all fire and building codea and ahall <br /> have easily removed, slant mounted filters or bafflea, <br /> 12) Ice maker drain shall have indirect connection to aewer. <br /> 13) The floor of all kitchen areas and all restrooms shall be <br /> water impervious, grease resistant, easily cleanable, <br /> amooth, safe and durable, <br /> 14) At all floor-wall 3unctures throughout the kitchen and <br /> restrooms the floor covering shall be coved and aealed <br /> or a sealed baseboard (ar mupboard) shall be installed. <br /> 15) ' All kitchen walls and restroom walls shall be light colored� <br /> smooth, nonabsorbent and �aasily cleanable, Walls subject <br /> to splash or spray shall also be water impervious. <br /> "Exposed utility service lines and pipes shall be instailed <br /> in a way that does not obstruct or prevent cleaning of <br /> the walls and ceilings. Utility service lines and pipea <br /> ahall not be unnecessarily exposed on walls or ceilings in <br /> walk-in refrigerating units, food preparation areas, <br /> equipment-washing and utensil-washing areas, toilet roons <br /> and vestibules. " Another related section of the code, <br /> Exposed utility service lines and pipes shall be installed <br /> in a way that does not obstruct or prevent cleaning of <br /> the floor. In ull new or extensively remodeled establishments, <br /> installation of expoaed horizontal utility lines and pipes <br /> on the floor is prohibited". <br />
