Burgess <br />The Brokerage <br />3120 Hewitt <br />Everett, Washington 98201 <br />Dear Mr. Burgess: <br />Approval of the plans submitted, including the written notations, for <br />the remodeling of The Brokerage is dependent and conditional to the <br />following: <br />BAR <br />1. Ice bins are not to have drain connected directly to sewer. They <br />can drain to dishwasher floor sink. <br />2. Brick wall behind "cooler" and "tanks" and up wall a foot or so <br />above the counter top is to be smooth, nonabsorbent, washable. <br />3. Work counter of bar is to be well lighted such as a small fluores- <br />cent tube over the compartment sink and another over the dishwasher. <br />(Be sure to mount the light fixture far enough under the counter to <br />avoid glare for the bartender.) <br />4. Floor covering will be coved at floor -wall junctures. <br />NEW KITCHEN <br />1. Plan submitted is changed by raking hood (36) longer and placing <br />oven (#3) under it. <br />2. Suitable and adequate provision will be made for hood exhaust <br />replacement air. <br />3. Hood will have cleanable, removable filters. <br />4. Hand sink (V8) will be located in the kitchen, not across the hallway. <br />5. There will be a salad bar counter (not customer self-service) where <br />bar was located. <br />6. Hose bibb will be provided at floor sink where bar was located and the <br />floor sink will be used for mop sink. <br />7. Suitable and adequate refrigeration will be provided in the kitchen. <br />8. Dishwasher (;?5) will be chemical sanitizing type but will be plumbed <br />to provide water at about 1400F. <br />9.
