CMU and CIP do not meet this requirement. <br />f <br />I <br />An appropriate wall finish is required. <br />Equipment shall not be located under exposed or <br />unprotected sewer lines, open stairwells or other <br />sources of possible contamination. There should not <br />be restrooms over any kitchen area or no kitchen area <br />should he under any restroom facility. All sewer <br />lines and water lines that might sweat and drip shall <br />have positive and dependable provision to carry any <br />possible leak or drip safely beyond the kitchen area <br />or to approved drain. <br />All equipment in which food or food -contact surfaces <br />are placed shall not have drain directly connected to <br />sewer. See sink in work table #24, sink in soiled <br />dish table #40, and ice machine #48. <br />Kettle #25 and steamer #26, both need strategically <br />located floor drains or sinks. Sheet M2 shows a <br />FD3 for steamer, and the symbol by the kettle but it <br />is not labeled or listed. <br />Floor sinks are to be set flush with finished floor <br />
