Jail Construction Project/Food Service Facilities <br />November 18, 1983 <br />Page 2 <br />There is only one hot water tank to serve all of floor S1 and <br />the kitchen is some 70 feet away. It is understood this <br />tank with the indicate water circulating pump is to maintain <br />hot water at least 140 F. at all times to all parts of the <br />kitchen. <br />Food disposers #12 and #41 being moved over from the old <br />kitthen will require some maintenance before put in new operation. <br />Toilet room S127 needs 90 cfm air exhaust and blueprint indicates <br />only 60 cfm. Toilet S135 requires 75 cfm and blueprint indicates <br />only 60 cfm. <br />Product cooler #1 and meat and dairy cooler #3 and freezer ;#5 <br />are to have floors slope gently to the doorways to prevent any <br />puddling inside. And, floor by these doorways is to slope <br />into floor drain FD1. <br />Both handwash stations (Lay. #15) shall have conveniently nearby <br />hand cleaner and towel dispensers. <br />It is noted the kitchen cooking hood system is a Saco Engineering <br />unit. However, it is even so questioned if 9000 cfm is adequate. <br />Please submit calculations to prove. <br />Sheet A 15.3 G does not agree with equipment #51 description. <br />More information is needed for the Food Transporter #47. Please <br />submit statement of intended use and what food handling facilities <br />are on them. <br />The plan review fee is $26.50 per hour. Your time is eight (8) <br />hours.
