No advanced preparation <br /> of foods that require cooling and no cooling of leftover toods will be allowed unless a walk-in <br /> refrigerator or blast chiller (rapid temperature pull down refrigerator) is installed or other <br /> Health District approved cooling methud is in place. Use of cociing methods other than in a <br /> walk-in refrigerator or blast chiller must be approved prior to final plan approval. A revised <br /> HACCP is required for any proposed cooling method. <br /> g Based upon items #1 and #2 above, it is highly recommended that the two reach-in refrigerators <br /> (items #8) be removed and realaced with a walk•in re(rigerator in the same location. An alternate <br /> location a walk-in refngerator is the unlabeled room next to the mixers (items #9A and #98). If a walk- <br /> in refrigerator is proposed, the location must be shown on the floor plan and the manufacturer name <br /> and model number submitted. lumbin fixtures and <br /> 10.
