All food-service equipment must meet the National <br />Sanitation Foundation standards or its equivalenr. <br />2. All food-service equi.pment must be ser��ed by indirect <br />drains (example: f'loor sinks and funnel drains � <br />except refrigeration equipment with built-in ev�porators, <br />hand-wash and mop sinks. <br />3 <br />C�f <br />5 <br />a. If food is prepared on [he premises (examnle: rinsine <br />vegetables, thawing foods, etc.) then a one or more <br />comoartment sink is required. The food nren sink <br />must have at least one drainUoard. The drainboard <br />must be an integral part of the sink assembly. If <br />food is not nrenped on the oremises, the Snohomish <br />Health District must be so advised in writing. <br />b. The custom stainless steel three compartment sink <br />with the pre-rinse and the douhle drainboards cannot <br />be used for food prep ��ork---only scullery work. <br />a. The three compartment sink (equipment item 40 of <br />sheet EQ-1) must meet N.S.F. standards. <br />b. Also, the above sink must be plumbed to a indirect <br />drain (floor sink) instead of a direct drain as <br />shown on sheet P-1, P-2, and L:Q-1 of your plans <br />a. Walls and cei.lings must be �mooth,nonaUsorbPnt, <br />and easily cleanable. Atasonry biock walls, even <br />though painted with eooxy paint, are not considered <br />a smooth and easily cleanable finish (room finish <br />schedule, sheet A-7). There are �aall panels <br />constructed of plastic l�minates that may be used <br />to cover the masoury block walls. Ilowever, "Marlite" <br />and similar products with a matted backi.ng are not <br />approved materials. They aUsorb moisCure. <br />b. Kitchen ceiling tile should be waehrible and non- <br />perforated. <br />
