Project plans show some kitchen related space mainly to serve the larger auditorium and a cafe/coffee shop.. Plans <br /> include a three compartment sink, single compartment sink, coffee rinse sink, at least two under counter dishwashers, <br /> and several floor sinks.There is no grease removal system showing in the plans.The super at the site told me last week <br /> someone had decided not to build out the kitchen space. I took him to mean they were deferring installation of fixtures <br /> etc. to some future "tenant improvement." <br /> I haven't seen anything in writing to that effect. Nonetheless, we need to convey to the designer/architect and <br /> contractor that the project will require installation of a grease removal system to serve the above (future) <br /> drains/fixtures.That is,they must accommodate the fixtures up front with a grease removal system that will serve the <br /> food services eventually located in this$70M LEED facility. New construction requirements are for a minimum 750 <br /> gallon gravity grease interceptor. However, since the kitchen space is in the middle of the building footprint, and since <br /> the building lacks a basement/garage space, I believe we would entertain a proposal for some alternative or hybrid <br /> system. It should be something more than a simple small grease trap on the three compartment sink. <br /> I'm not sure who needs to get this information so they can modify plans and submit a proposal for a system to us. <br /> Hopefully you can help forward this info to the necessary parties.
