Food Preparation steps <br /> CREPES <br /> Batter:We are using Carnival King Crepe Mix 5 lb.Bag. <br /> To prepare,add dry crepe mix to cold water,and mix until smooth and frothy.For every 1 lb.of dry mix,use 2 1/2 <br /> cups cold water,For every 5 lb.full bag of dry mix,use 3 quarts plus a 1/2 cup of water.Allow the batter to sit in <br /> refrigeration until the foam subsides. <br /> Batter will be mixed in the morning for the use of that day.Left over batter will be stored in a tupperware and will <br /> be kept in refrigerator. <br /> To cook crepe:Using a crepe maker,preheat at 350 degrees.Use non-stick cooking spray ei.PAM,to spray crepe <br /> pan,take Y2 cup of batter and spread in a circle motion to make a round crepe;wait till it makes bubbles,flip it over <br /> and wait till brown.This should take about 30 seconds to make. Crepes are only made once customer orders. <br /> To serve/present:Take cooked crepe,put in a paper plate or to-go box pan then take to food prep table,here you <br /> can put any of the condiments that the customer wishes.For this recipe,we will do the ORIGINAL flavor- 1st- <br /> using a spatula take 2 Tbsp.of nutella spread nutella on the crepe,then take the whip cream starting from middle top <br /> of the crepe run halfway vertically,you may use this a a guide to place diced strawberries,diced banana,and Y4 cup <br /> of blueberries.(Fresh Fruits will be cut in the morning and will be stored in food prep refrigerator.)Then it can be <br /> folded into 4ths and place in a paper plate or to go styrofoam box.Fruits will be bought in grocery store,stored in <br /> refrigerator.To prepare the fruits,they will be washed in the Fruit Sink.Fruits like strawberries,kiwis,cantaloupe <br /> will be cut in the morning,and store in the food prep refrigerator table. <br /> Jelly Toppings;Arrives in the store in a plastic container,packed and sealed from supplier.2 Quarts of the jelly will <br /> be put in a square plastic container and stored in food prep refrigerator for the day use.The rest of containers will be <br /> stored in under counter refrigerator. <br /> This also can be topped with a scoop of Vanilla Ice Cream.(Ice cream is stored in the freezer.) <br /> Whipping Cream Topping(We will be using the ICO Professional Whipping cream Dispenser) <br /> Ingredients(Heavy whipping cream,vanilla,sugar)will be using N20 whipping cream charger. <br /> This will be store in undercounter refrigerator. <br /> We will also use already made whipping cream from Costco. <br /> If a customer chooses to order to go,whipping cream will be put in a small plastic container to avoid sogginess of <br /> crepes and waffles. <br /> We will be using disposable plates to serve or a to-go box. <br />
