To cook crepe:Using a crepe maker preheat at 350 degrees,use non stick cooking spray ie.PAM,to spray crepe <br /> pan, take%2 cup of Ube/Purple yam batter and spread in a circle motion to make a round crepe;wait till it makes <br /> bubbles,flip it over and wait till brown.This should take about 30 seconds to make. Crepes are only made once <br /> customer orders. <br /> To plate:Place cooked crepe on paper plate or to go box- using a spatula spread nutella half of crepe,used a <br /> different spatula then take 1 Tbsp of Ube Yam and spread around crepe, and then take to food prep table,place all <br /> fruit condiments on top of crepes then fold,from freezer take scoop of Ube Ice Cream and place on top of folded <br /> crepe,take egg flan from refrigerator and take a slice and place on crepe,and add whipping cream.Then Squeeze <br /> bottle of condensed milk on top of crepe and served with fork knife. -If customer orders to go all wet ingredients <br /> are placed on plastic cups to avoid sogginess, customer can assemble when ready to eat. <br /> WAFFLE <br /> To prepare batter: <br /> In a bowl-mix 10 cups of water with one bag of the 5 lb. Carnival King waffle mix. <br /> Allow the batter to stand in refrigeration until the foam subsides. <br /> Batter will be only be mix in the morning for the use of the day.Left over batter will be stored in a <br /> tupperware and will be kept in refrigerator. <br /> To cook waffle:Using the Carnival King Non stick Waffle Maker.Use non stick spray to spray waffle maker.Place <br /> 1 cup of batter into waffle maker,and close.Within 2 minutes flip waffle maker,Waffle can take 4 minutes to cook. <br /> May also use timer indicator on waffle maker. <br /> To plate: Depending on what the customer chooses.Toppings will vary.All toppings are the same as the crepes. <br /> Take cooked waffle,put in a paper plate or to-go plate or to gothen take to food prep table,here you can put any of <br /> the condiments that the customer wishes;for this recipe we will do the original flavor- 1st-using a spatula take 2 <br /> Tbsp.of nutella spread nutella on top of waffle,then take the whip cream and place fruits and other toppings. <br /> Whipping Cream Topping(We will be using the ICO Professional Whipping cream Dispenser) <br /> Ingredients(Heavy whipping cream,vanilla,sugar)will be using N20 whipping cream charger. <br /> This will be store in undercounter refrigerator and mini refrigerator. <br /> Seasonal Mango Waffle: <br /> Batter will be made the same. <br /> Topped with Sweet Mango(purchased from Evergreen Asian Market or Costco),White Chocolate,Condensed <br /> Milk,Whip Cream Mango Ice Cream.(purchased Evergreen Asian Market) <br /> 3 <br />
