• <br /> (3) When all floors are kept clean during the hours of <br /> prepering,oroking, baking and serving of food. Floors shall be <br /> kept free/not only organic filth but also of litter. <br /> Item 2. Walls and Ceilings - <br /> Walls and ceilings of all rooms in which food or drink <br /> is stored, prepared or served shall be kept clean and in good <br /> repair. All walls and ceilings of rooms in which food or drink <br /> is stored or prepared shall be finished in light color. The walls <br /> of all rooms in which food or drink is prepared or utensils are <br /> washed shall have a smooth washable surface up to the level <br /> reached by splash or spray. <br /> Satisfactory Compliance - This item shall be deemed <br /> to have been satisfied if: <br /> (1) Walls end ceilings of all rooms in which food or <br /> drink is stored, prepared or served/are clean and in good repair. <br /> (2) Walls and ceilings of all rooms in which food or <br /> drink is prepared or stored are painted or finished in light <br /> color and refinished as often as necessary in a manner approved <br /> by the Health Officer. <br /> (3) The walls of all kitchens and sculleries have a <br /> smooth washable surface up to the level reached by splash or <br /> spray, especially splash or spray from the dishwashing vats or <br /> machine. Evidence of splash cr spray above the impervious <br /> surfacing shall be deemed a violation of this item and shall be <br /> sufficient cause to require additional impervious surfacing. <br /> Item 3. Lighting - All rooms in which food or <br /> drink is stored or prepared or in which utensils are washed shall <br /> be well lighted. <br /> Satisfactory Compliance - This item she 11 be deemed to <br /> have been satisfied if artificial light sources are provided <br /> equivalent to one 100-watt electric light bulb per 100 square <br /> feet of floor area, reasonably evenly distributed, and are in <br /> use except when equivalent natural light is present . <br /> Item 4. Ventilation - <br /> All rooms in which food or drink is stored , prepared or <br /> served or in which utensils are washed shall be adequately <br /> ventilated. <br /> Satisfactory Compliance - This item shall be deemed to <br /> have been satisfied if all rooms are adequately ventilated so as <br /> to be reasonably free of disagreeable odors and condensation. <br /> Ventilation equipment supplementary to windows and doors, such <br /> as adequate exhaust fans or stove hoods, shall be provided if <br /> necessary. <br /> -3- <br />
