Subject: Proposed Katana Sushi, 2818 Hewitt Ave, Everett <br /> September 19, 2013 <br /> Page 2 <br /> #FGCH25M8LW1, is a domestic (home-style) chest freezer. Domestic refrigerators and freezers are <br /> not allowed in a food service establishment. This equipment must be replaced with NSF or <br /> equivalent listed equipment. Manufacturer names and model numbers for replacement equipment <br /> or equipment documentation must be submitted. <br /> 10. Your variance request to allow less than the required minimum of 144 cubic feet of food storage <br /> refrigeration stated that your establishment will have 129 cubic feet of refrigerated food storage <br /> space. Your proposed establishment has one 2-door under counter refrigerator and one 2-door <br /> upright refrigerator for food storage. Your proposal also includes on sushi display refrigerator and <br /> one freezer. Freezers are optional, menu dependent and do not take the place of the required <br /> minimum amount of refrigeration. Beverage and display refrigerators are also optional and do not <br /> take the place of the required minimum amount of refrigeration. Based upon the manufacturer <br /> websites for the under counter and upright refrigerators, your proposed establishment has only 56.7 <br /> cubic feet of refrigerated food storage space. This is an insufficient amount of food storage space <br /> for your proposed establishment. A minimum of an additional 87.3 cubic feet of refrigerated storage <br /> space is required. The location of the additional refrigeration must be shown on the floor plan. The <br /> manufacturer name and model numbers for this equipment must be submitted. Consideration of the <br /> installation of refrigeration of a lesser amount requires written justification to be submitted for <br /> review. This written justification must include the projected volume of food to be stored, the number <br /> of deliveries for each food item per day/week, the proposed number of meals per day, a copy of the <br /> proposed menu (including all food and beverage items) and a description of the food preparation <br /> process for six menu items. The justification must also include the reasons why you believe a <br /> variance to the minimum refrigeration requirement should be granted. The enclosed variance request <br /> form must also be completed and submitted with any variance request. <br /> 11. The floor plans submitted have no identifiable scale. Submit a revised floor plan, drawn to scale, <br /> showing location of all equipment, plumbing fixtures and the like. The scale of the drawing should <br /> be 1/4 inch equals 1 foot. Please note that plans may be submitted in an unsecured PDF format. <br /> Cut sheets and all other information may also be submitted in a PDF format. <br /> Please note that prior to opening of the new facility, after the Health District plan review process is <br /> completed and construction is finished, the Health District permit application process must be <br /> completed and a preoperational inspection must be conducted. <br /> Please contact me if you have any questions.
