All high temperature di.shsaashing machi_nes <br /> must maintain 180°F. rinse zaater Lemnerature during the <br /> maximum demand of the machine. Alsa, L'he booster heater and <br /> the main hot water tanks must be serviced. <br /> b. The clean and soiled dishtables are in good repair, however <br /> the metal back splash is in poor repair and must be replaced. <br /> 4. a. The existing t�ao compartment and one compartment sinks and <br /> drainboards do not meet the National Sanitation standards <br /> (ex. Drainboards lacks turned up edges , open seams, screw <br /> fastners, lacks 1/4" x 1/8" sink radii, drainage trom drain- <br /> Uoards not directed back into sinlc comnartments , etc . ) . <br /> b . 'Phe three compartment sink is aUout the same condition as <br /> above. From your preliminary plans, this sink will be <br /> removed. <br /> 5. a. . The exisling galvanized hood canony, oven, deep fryer, hot <br /> food server, grill, and the two unright freezers appears to <br /> be serviceable, ho�oever the� must be thuroughly cleaned. <br /> b. It is the understanding, the remaining equi�ment will be <br /> removed. <br /> 6 . a. The kitchen liand-ccashing station was removed and a work counter <br /> installed in its �lace. The hand-washing station must be <br /> reinstalled between the food pren and dish�aashing areas . <br /> b. The Snohomish Health District does not recommend thaL- hand- <br /> �vashing stations be part of the working counter tops . Invariably, <br /> the sink becomes a utensil sink as well as a hand-washing, sink. <br /> c. Soap and towel dispensers aze required at the kitchen hand- <br /> washing station. <br /> 7 . P4op (utility) sink is required for cleaning mops, obtaining water, <br /> and dispo�al of mopcaater or simila� liquid wastes. <br /> 8 . The kitchen concrete flour has e-roded and must be completely <br /> resurfaced or replaced . Also , the floor must have a coved base. <br /> � <br />
