All cocktail bar equipment must meet N.S.F, standards <br />or its equivalent. <br />3. The four comnartment bar sink, Jockey box, and refrigera- <br />tion equipment without built-in evaporators must be <br />served by indirect drain (floor sink). <br />4. The overhead glass rack must be so designed that glasses <br />are not contaminated by the customers (handling and <br />dronlet infection). <br />5. Light fixtures (preferably fluorescent)must be installed <br />under the �ocktail bar top i.n order to illuminate the <br />har sink and drainboards as well as all working surfaces. <br />6. Phe back assembly of the co�r.ktail bar must be an encZoc;ed <br />structuxe---no exposed 2" X 4" or 2" X 2" structures. <br />7. The floor behind the cocktail bar must be a smooth, non- <br />absorbent, and easily cleanable surface. Also, the <br />floor must have a base cove at a11 wall and bar junctures. <br />8. The nlan review was made from information your presented. <br />Therefore, should there be any changes and/or additions <br />to your layout plan and equipment list, you must notify <br />the Snohomish Health District of the changes. <br />9. It should be pointed out that the health department <br />approval of the finished installation (equipment and <br />facilities) is subject to the final field inspection. <br />Theref.ore, when ready, you should call for the final <br />field inspection. <br />
