E. <br />Marysville, Washington 98270 <br />Re: Plan Review - Pardee's, 2915 Hewitt, Everett, Wash. <br />Dear Mr. Pardee: <br />Plans for the above referenced food-service establishment <br />have been reviewed with the following comments: <br />1. Service entrance must have a self-closing door which <br />is maintained closed or have a self-closing, tigfit= <br />xtting screen oor. <br />2. It appears the vegetable sink, ��K 14, wou11 be more <br />useful if there is a drainboard on each end. The <br />drainboards are to be an integral part of the drain- <br />board-sink assembly---not counter drop-in sinks. <br />3. Hand wash st�tion, ;�K 15, is to have hand cleaner and <br />towel dispensers conveniently nearby. It is preferred <br />this sink is a small one because it is for washing <br />hands and no other use. <br />4. Clean dish landing rails over the three compartment <br />sink, ��K 18, should not extend beyond the �:iddle <br />compartment---not over dirty-dish sink. <br />5. Ali equipment in which food or food-contact surfaces <br />are placed and from which waste water is discharged <br />must have indirect connection to sewer. See ��P 18. <br />6. Sinks used for food preparation or for washine equip- <br />ment or utensils sha11 not be used for handwashing. <br />Nunber K 29C is excellent except it should not be a <br />utility sink, it should not be a counter drop-in type, <br />and it should be se�arated from food nreparation. <br />Shifting ��K 29 and ;=K 30 and putting a hand wash station <br />in the corner is annropriate. The sink is to be <br />separate from the counter and have conveniently nearby <br />hand cl2aner and towel dispensers. Water discarding <br />and stich is not objectionable but there is never to be <br />anything in the sink---always available for washing hands. <br />7 <br />E <br />All Floor-wall junctures throughout the kitchen and <br />restrooms are to be coved and sealed. <br />All kitchen lighting and equipment lighting tubes and <br />bulbs are to have pretective covers. <br />1 <br />
